Even for a stem major, colleges will prefer four years of language to AP Env, which is considered a fluff AP by admissions officers. (edit - looks like ucb already pointed that out)
BTW, Spanish 4 is an honors course at our local high schools, also typically taken junior year.
Take Spanish 4. Not taking it will mean a lot of good colleges are off the table. Not to mention the pro of actually becoming fluent in it down the line, the advantages of which have been explained well here already.
Is it typical to take Alg2/Trig and Pre-Calc together? At my kid’s schools one was a pre-req for the other.
Either way, I think forensic science is the one to drop. I don’t think colleges would care much about that one at all.
