To make it more comparable as to why some call themselves atheists, think of it like this.

I, an atheist, am not entirely certain that god(s) exist(s), but I am unconvinced of their existence. I lack belief in god(s), a slight difference from disbelieving in god. But in the same way I lack belief in the god of the Bible, I lack belief in the Islamic god, the Hindu gods, the gods of Classical Greece, and so on. I see no difference between these gods, and am agnostic about all of them in the same way. I view them as man made things, much like unicorns, ferries, goblins, and the countless other things. I find the likelihood of their existence as probably as the gods I listed.

Yet would I call myself an agnostic in respect to Zues? No. I've never met somebody who was adverse to saying "I do not believe in Zues."
So from my point of view, what sets the god of the bible above Zues or even a unicorn? Why must I be agnostic in respect to him? Just because more people believe in him?

I think your difficulty with atheism lies in the fact that you're wondering why atheists aren't better suited as agnostics. That question is wrong, because, as you mentioned, that question could be extended to theists as well. The reason I absolutely hate the term "agnostic" is because everyone is agnostic, and I am certainly not like everyone. Whether they admit it or not, they do not really know whether their god exists or not.

So I do not use the term agnostic because it says nothing about me...

Imagine someone asking what my religion is:
"Hey, what religioni are you?"
"I'm an agnostic."
"Does that mean you're unsure about god?"
"No, I know what I believe"
"Why are you agnostic?"
"Because technically, I don't really know that god exists"
"Oh, well do you believe in god?"
"Uh, no not really. (or yes depending on what you believe)"

And so on... Being agnostic says nothing about you, and while atheism has it's downfalls, such as me typing this ridiculously long post to try to cram it in your skull, it does describe in a much more personalized way, and that's why I'm an atheist.
