Should I skip the math and physics prereqs for the college of engineering using AP credits?
If I were to skip these classes, would I take more advanced engineering classes in their place or more advanced math/physics courses?

If you already know the material there is no reason to waste tuition and time in your undergrad taking them again.
How well did you do on the tests? If you got 5s, I would say skipping the classes is fine. If you got lower than that, you might want to retake them. I did, and was happy with my decision. You need to know that stuff really well before you start applying it in engineering classes.
You would probably take more advanced math/physics courses in their place if you skip them.

My D got 5 in AP CalcBC, AP Chem, and AP Physics. She skipped Calc1, Calc2, Chem, and Physics1 in CoE. She started with Calc3 and Hon Org Chem 1 in freshmen. She also took Physics 2 in a CC over the summer before sophomore year, so she skipped that at UMich too.
