So this junior year, I bit off more than I could chew.

Freshman year: 4 honors classes, 2 reg
Sophomore: 1 AP (Euro), 3 honors, 2 reg

Junior: 4 APs, 1 honors, 2 reg

Also during Junior year I did a lot more extra curricular activities ... accepted into the school's Community Service group, won National Service Honors award, 2nd place in a competition involving Economics/Business, Varsity XC/Track, became an Online Editor (leadership position) in Journalism, etc.

But in spite of trying my hardest, my GPA became dog **** this year:

AP lit: A-
AP Chem: B
Biology Honors: B-
AP Calc AB: B+
Spanish: A-
Journalism: A
APUSH: B+

That essentially equates to a 3.38 UW, which will destroy my GPA overall.

I was looking forward to go to a good undergrad business college in the top-20 (like BC's Carroll school of management, NYU CAS economics, or NYU Stern) .... will I have a chance at any of them?

You can still do it if you make yourself stand out in the rest of your application. You’re taking a rigorous course load your junior year so there’s no shame in that. Let me tall you, during my junior year, I got a C (yes that unsepakable grade) which brought my overall average that year to like a 3.2 something. Nonetheless, I worked really hard my senior year, really told my stories in my essays, and I was still able to get into some pretty competitive schools. So colleges look at you holistically and not just at one year, so make sure you take advantage of that.

Also my school offers 7 APs total for junior year… and my guidance counselor said it was the hardest course load I could have chosen for this year.

AP Euro
APUSH
AP Lit
AP Calc AB
AP Calc BC
AP Spanish
AP French

AP Bio (Seniors only)

I think that every college I have visited or researched has plainly stated that curricular rigor (ie. “most demanding available course work”) is the single most important criterion in admissions. The 3.0 in an AP or IB class will be weighted as a 4.0, and they will consider you better prepared for college than a student who received a 4.0 in a standard-level or academically-unchallenging class. All colleges will employ their own weighting systems. That being said, you will be up against students who received A’s in their AP or IB classes. You did not mention your test scores. Are they competitive? Have you checked out your school’s Naviance site to see how students with similar stats to yours fared? My son had an unweighted 3.3-3.4 GPA and he got into some terrific colleges, but not into his highly-selective reach schools. His weighted GPA was around a 4.0 (depending on the formula employed), and he took the most rigorous classes. If your scores are respectable, you certainly have a shot at NYU CAS (Stern is probably a reach unless your scores are terrific, but not impossible). I don’t know how selective Carroll is. How does it compare with Gabelli at Fordham? Have you looked at Drexel, Lehigh, American, and Temple? You should be competitive at most of those schools.
