Should I include important or relevant extracurriculars I did as a freshman and or sophomore? even if they ended?

Yes, you can include anything, especially if it’s meaningful. Whether it’s ongoing isn’t critically important.
Duration isn’t a good measure for an EC. Being a “member” of a club for 4 years means less than leading a successful fundraising event over a period of a few months.
Whether your activity is worth listing depend on the specifics and the other activities you have to list.
