Made it today as our CSA has been delivering way too much cheddar cheese and just happened to also bring us a cauliflower last week. Quite good. My stock is made from chickens that were smoked on the grill so it has an interesting smokiness.
I have a stuffed pepper soup made in the instant pot which is delicious. Let me see if I can find the recipe!

I am a big fan of this Spiced Chickpea Stew with Coconut and Turmeric. I made it a bunch of times last fall and winter and it always got rave reviews and it’s very satisfying. I never made it in the crockpot but I don’t see why you couldn’t keep it warm in there though…the key is to smash the chickpeas by hand just enough to thicken the stew, but not so much they get gummy.
This looks AMAZING. Not hard!
I’m getting discouraged though because so many of them look so good but H will eat nearly NONE of them. He doesn’t do much besides chicken noodle, vegetable (and he seems to like restaurant versions and not mine), and a mild chili.
I guess I’ll attempt some when others are coming to eat or make a half a batch and eat it all week for my work lunches!!

I want to find/try an easy chicken tortilla soup recipe, if anyone has a good one.
This is the one I always make. Basically a “open cans and dump” soup. Have available whatever toppings you like at the end: tortilla strips, avocado, cilantro, shredded cheese, etc.
That looks like just the kind I need. May even have to pull out the brand new crock pot that’s been in my attic for maybe 15 years :). I just put necessary ingredients on my shopping list. Think I’ll try it next week.

Yes I have…more than once…and it’s delicious and easy!!
I just made my annual witches brew stew. I make it up every time, but it starts with sweet potatoes, carrots, and red lentils as well as onions and garlic, maybe some celery. We’re vegetarian so I use Pacific No-Chicken broth, but you could use chicken broth. When those ingredients are soft I use my immersion blender on it to puree. It comes out very orange and Halloweeny.
Then I add some goblin toes (fingerling potatoes), fire salamander essence (cayenne), maybe some manticore ears (mushrooms), etc. We used to make up all kinds of stuff when the kids were little.
The soup would be good as a puree, though, too. It does need some cayenne and salt and pepper to taste, maybe some Zatarains or Old Bay.
I make up a lot of soups. I’m terrible for following a recipe. My D22 loves soups, though, so I just wing it.
I’m taking an Ayurvedic cooking class at my yoga studio–made this soup tonight. It was very good.
Southern Living’s New England Clam Chowder is very good, but probably not very healthy. Unfortunately I can’t find an on-line recipe for it.

Another idea for cauliflower: I’ve found cauliflower makes a great substitute for potato in clam chowder. It is mild in flavor like potato, and takes about the same amount of time to cook, with a similar texture. It also makes for a lower-carb soup.
I really like this instant pot Ham Hock and Navy Bean soup. When I made this last week I accidentally bought smoked turkey tails instead of ham hocks–the results were just as good as (and maybe even better than) the original recipe!
