Soup Thread - Fall 2022

Looks like our last soup thread was just for fall 2021. So I’m starting a new one.
I’m especially interested in easy crock pot soups, but anyone can post anything.
I am planning to make the tortilla soup posted last year next week. Yum.

I made this two weeks ago and it was amazing! The only substitution was that I added a lot more liquid because it was too thick otherwise. I added 24 ounces of water and 1/2 of milk.

What a great thread. All my friends and family know I am obsessed with soup. One of my favorites is this easy crock pot french onion from America’s Test Kitchen – it takes all the work out of the caramelizing. Instead of paying $$ for gruyere, I use swiss slices and sprinkle with some shredded parmesan. Spouse makes homemade sourdough but I’ve used other bread too.

It’s been gloomy here for days. Rained Sunday, but the last three days not raining, just overcast and damp (fog). Perfect soup weather, something my youngest requests for dinner frequently. Sunday night I made this Chicken Tortilla Soup, a recipe from a friend.

My youngest and I are the only ones home this week. She loves tomato soup and grilled cheese, and asked for that tonight. I normally make Ina Garten’s tomato basil soup, but I tried this recipe tonight and we both agreed that we liked it much better. Recipe calls for heavy cream, but I used half and half. I would halve the recipe next time as this made too much. I’m freezing half of it.

For anyone who likes Thai, this soup is so good! After a trip to Hmart last week, I made this for the first time since last winter. It’s spicy!

Great idea for a thread. Hubby organizes a Friday happy hour with friends (texts the brewpub location). Sometimes we all go out to eat together afterwards, but since Fridays can be crowded I like to sometimes have a salad and crockpot meal ready to offer.

I made this with leftover pork bone instead of sausage.

I found that using homemade chicken stock makes a huge difference in a soup recipe. Making the broth is a time-consuming process, but so worth the effort. I try to make 8-10 quarts of it and then freeze it in quart and half-quart containers. I use a recipe from Thomas Keller, which I linked below. One of the keys to this recipe, I think, is using chicken feet. It’s hard to find them and you’ll probably have to go to a butcher shop to get them or a place like H-Mart (which is where I have found them). If I run out of my own stock, I do use the stock in a box–I like the Kitchen Basics Organic brand.

Actually, I never had that soup at Olive Garden ever. But the last time I ate there was a long time ago, maybe more than 10 years.
But I had plenty of kale potato soup.

I make something similar to this all fall and winter long:

I just throw whatever veggies I have in it, but I do like it to have some potatoes. Sometimes I add some pasta too. I like Better Than Bouillon’s “No Chicken Base

My kids used to love pho night, I cheat with the broth though.
