Does 5 years of Spanish (8th grade- senior year) help in any way? I mean I took the classes, because I wanted to be fluent in the language, but does having taken it for 5 years benefit me in the admission's process?

It wont help a significant amount (as in,it wont be a deal breaker), but colleges do like to see consistency in the language you take. For instance, 5 yrs in one language looks better than Fresh and Soph yr in French, then switching Junior and Senior yr to another language.
So, short answer, sort of.

Ah alright, and does fluency in 3 languages enhance my resume?

youre being way too shallow about this dude. everything, every accomplish that you have, is all a part of what makes you you. ill bet you that being fluent in three languages or not being fluent in three languages is hardly gonna make a difference at all in your decision outcomes, but its important nonetheless. you take that plus some away adn your profilell be a lot different.

This is a topic that has come up before. For a good summary of the main issues, and advise on how to best demonstrate your language study to admission committees at selective colleges, see;

The summary is that there are many ways students acquire language before they enter high school. In your case it was a year in middle school. For others it may have been 2 or more years. And for others, in an immersion program, it may have since pre-K. Then there are students who are bi-lingual because of their heritage and language use at home.

What selective colleges want to see is rigorous academic coursework in the core subjects. And for most colleges, foreign language is one of the core subjects. The equivalent of 4-years of a single language at the high school level, with some depth in the literature of that language is the goal. In practice you can place out of coursework, depending on what you did before you entered high school.
