Subject Test CONFUSED

so im flustered over this. So say that a school REQUIRES 2 subject tests (i.e. UC system). And say I take 3. Will they ONLY look at my best two? or will they consider my best two, and still see the 3rd??
what about this, say a school RECOMMENDS 2 subject tests (i.e. Stanford)
and i take 3. will they see all 3 or consider just my best two?
so if i had an:
800 Math IIC
800 Physics
710 US History
would the Us History negatively affect me even though a school required only 2?</p>

<p>i have taken the Math IIC and received that score
but Physics and US History are predictions...</p>

They say they will consider your best two.</p>
