Summer camp

Summer experiences can be important in admissions, but I haven't been able to get a job or do anything really "academic" during the summer (with the exception of some community service and online classes). However, I've been/plan on going to a weeklong summer camp in Georgia with my church. It's religion based, but is excellent in character building, community, etc as well as an opportunity to try things that you wouldn't normally be able to do (like an abundance of outdoor activities). Is this experience suitable to put on my applications/resume?

I would not put it on a resume. You can put it on your college apps, but realistically it is not much of an EC in the eyes of a college. If it were some kind of volunteer trip where you were doing community projects, that might carry a bit of weight. Or if you were in a counselor position so you got some leadership practice. But other than that it isn’t going to help you much. Also, 1 week is really short (so even with counselor or some kind of project experience, it is not going to add too much weight to your application).
