Last time I took the SAT, I got an 800 on math, a 680 on reading, and a 690 on writing. I'm taking it again this Saturday to raise my writing and reading.

Since I've already scored an 800 on the math portion, do I even need to worry about it? Theoretically, could I go in and Christmas tree this portion since I've already scored so well on it? Will the colleges see this score at all?

I asked this question awhile back since I had very similar scores to you. The superscore doesn’t apply to all colleges. For example, I think all the UCs base it off one sitting. You should check which colleges you’re applying to and see if they do do that.
I myself don’t practice math problems anymore, but I still score consistent 780+s (missing one once in a while) on practice tests anyways. You probably will too.
