What you saw was a Slate style Tablet PC. A Slate usually comes with a separate docking station with a a keyboard and an optical drive (dvd/cd).

Slate manufacturers: Motion Computing, Fujitsu, HP and Electrovaya Scribbler.

New Slate models are expensive. They're run closer to $2000. You might be able to find used ones on Ebay or at the "for sale" forum at Tabletpcbuzz.com: http://www.tabletpcbuzz.com/forum/forum.asp?FORUM_ID=27

For around $1000, there's only the Gateway Tablet PC which is a Convertible Tablet: a Tablet PC that has the keyboard attached via a swivel center hinge which allows it to be used like a regular laptop or as a Tablet.

Someone asked the same question on a forum at Tabletpcbuzz.com: http://www.tabletpcbuzz.com/forum/topic.asp?TOPIC_ID=36194

Tablet PCs are starting to show more and more in movies and on tv:

Tom Cruise used one in the movie "Collateral".
The TV series "Bones" has the character "Angela" use one.
The TV series "24" has Chloe walk around with one...

Good luck!
