taking a few online classes during gap year

I am taking a gap year and plan to do self-study (= me, the library, and a notebook) .
I’m thinking it will be more competitive for my applications to be taking or have taken some online classes…probably just for first semester because I am WWOOFing second semester.
One option is NVCC classes. That comes to mind because I don’t drive and don’t want to deal with travel back and forth to classes, but they offer online classes.
I was wondering what the best schools are for someone in my scenario are. Any help is appreciated!

the byu self study program looks really good…thoughts?

the more I look into it the better suited it looks towards me. So basically I submit the assignments at my own pace and then it’s all up to how i do on the final exam. Do any other places offer a program like this? Will colleges take this program seriously?
