Taking a subject test from my native language will affect me in admission?

I am considering taking the Spanish Subject test on December as it is going to be super easy since my mother tongue is spanish (and I am an international student who lives in a spanish spoken country). I even asked Princeton's officials if I can do that I they told me yes. However, I was wondering, will it affect me when I am applying? I mean, they will they take my grades seriously? Or should I take another one instead of that?

Oh, and I forgot to ask: I want to send my application by December 15th but I dont think scores will be available until December 25th probably. Should I just leave the space for my sat scores in blank (in the online common app) or should I wait for them to be available and then send my application? What if I take a January test?

Taking the Spanish test is fine. But, just in case, you might also consider taking an extra subject test (in Humanities) as a backup. And, make sure you ace the Spanish test!

If you did well on your other subject tests, have extra money and plan to use it as a supplement to your app, you should take the exam. However, if you’re planning on using it to meet the 2 - 3 SAT II tests requirement, then don’t bother. They won’t take your score seriously in this case, because they know that the SAT II language tests are easy 800’s for native speakers. Focus on another exam.

If you have the money and are confident in an 800, go ahead. But realize that anything <800 is pretty bad for you and even an 800 isn’t so impressive. But an 800 still has some value.
