Taking CC classes over the summer?

I am at home for the summer doing research and volunteering and was also thinking of taking some community college classes because I have free time. How does this sound like an okay plan? Or do you think that med schools will think I am just trying to "pad my GPA?"

No, this is not advised. Summer courses should be done at the same level of rigor as that at your home institution.

I know it will be easier to do well, but that's not worth the impact you take for studying at a CC when you are enrolled in a four-year university.

Notice that I am not speaking against enrolling in a CC. I have no idea what that does to an application - for better or for worse, I simply have no idea.

But if you are enrolled in a four-year college then your coursework needs to be done at that level.

what if you are taking it at a local four-year institution that is below the level of your home institution?

Also not advised, although (clearly) not as strongly advised against. This is what I've always been told.

how about if you take it abroad as in study abroad?

Make sure they're not premed courses, but study abroad is not discouraged for premeds.
