Teacher Evaluation Question!

Many, if not all college applications will become available between now and September, so I am thinking about teacher evaluations. Here's my dilema:

I would like to have my Spanish, Physics, and Economics teachers write recommendations. I'd like to mix and match... for example have Physics and Spanish write for one college and Economics and Spanish for another. The issue is, I don't know which schools will allow a recommendation from an AP Economics teacher (I've had him for 2 years). I'm also considering send some colleges all 3 recommendations. I'm just having a lot of trouble deciding what to do for recommendations to each college I'll be applying to. Here's my list of colleges and ideas:

Amherst
Bowdoin
Bucknell
Colgate
Dartmouth (I'll probably do ED; I'll do Physics and Spanish; They require a peer rec)
Harvard
Lafayette
Middlebury
Penn
Princeton
Rochester
SUNY Geneseo
Williams
Yale

These teachers love me and know me very well. I'm confident they'll write great things. I just don't know how to arrange this. Can anyone help generally, or even with specific colleges? Thanks!

Most schools ask for a rec from a teacher in an academic subject. I think that Econ counts. But if you're concerned, discuss it with your teacher. I'm sure he knows; the issue must have arisen before.
