teacher recommendation dilemma

this week, I will ask for teacher recommendations, but I don't know who to ask. btw, I want to major in science.

english: I sense that my teacher doesn't like me, and he is overburned with so much work. However, he knows me VERY well since I have taken his classes for two years. I got Bs in one class and As in elective course. I sense that he might write a negative recommendation, but, again, I am not sure.

Math: Although my teacher knows that I am hard working and dedicated, I haven't shined in his classes (Bs in one class and a B in AP class in the beginning of the year). However, I improved academically (an A in AP at the end of the year and got a higher B in another class as well). He knows me pretty well since I attend a club where he is a sponsor of.

physics: although i took her class for one year, we know each other pretty well. she knows that I am interested in science and wants to go to a good college, and she also knows that i am dedicated and hard working. but, I haven't shined in her classes too (Bs)

Who should I give TWO recommendations to? Should I write a cover letter explaining how I learned to become a better student from their classes and that I am still improving academically (straight As now)?

Choose math and physics. I get a bad feeling from the english teacher.

that's what i thought. should i write a cover letter as well?

Can someone explain to me what a coverletter actually is for teacher recs?
