i want to go on a long vacation this summer from late june to end of august. would i be missing anything important at the uc i decide to attend? (registrations, housing information, etc…) also when do we “move in” to our dorms and when does school officially start?

You can probably sign up for an orientation (and registration) for June-- it would be one of the first sessions. They are usually finished in August. Most UC's start in mid to late September, except for Berkeley, which is on semesters rather than quarters, and begins in August. Move in is usually the weekend before the first week of school, with a few days to get acquainted.

is it really important to go to orientation? and would a school like uci start around sept 25?

I'm not sure about UCI, but one of the things that happens at most orientations is that you are assigned to an advisor, and you sign up for your fall quarter classes. At UCSB, my daughter also met the girl who has been her roommate since freshman year-- they really hit it off at orientation, and have developed a lasting friendship. And yes, most of the UC's start the last week of September, including UCI. Try doing a search for "academic calendar" on the UCIrvine web site-- they probably already have it scheduled.
