Too little APs?

Hello! I am currently a sophomore in high school and I am freaking out about my future. I really aiming to get into a good college, however, I have no idea what looks good/bad on my transcript. Here's the classes I took, am taking and will take:

Freshmen year:
Honors English
Honors Bio
Honors Global
Algebra (regular class)

Sophomore year:
Honors English
Earth Science (regular class, I was suppose to go into chemistry, but they dropped me to earth science regents but I have no taken geometry previously)
AP World
Geometry (regular class)

Junior year:
AP English
Chemistry (regular class)
AP US
Trig (regular class)

*they only offer 3 APs, i can't take a science AP because i have chemistry

Senior year:
AP Lit (maybe)
AP Bio
AP Gov (maybe)
Pre-calc (regular class)

*i have no idea how many APs they offer, no more than 6 though. i cannot take a math ap or a language ap (they only offer AP spanish and i take italian)

So here are my questions and concerns:
Is 4-5 AP classes throughout high school too little? I haven't decided if I want to take AP Gov and AP Lit in my senior year.
Is it better to take an AP class and get a not so good score on the exam or to just do well in an honors class?
I really, really dislike how I am in 2 regular classes sophomore and junior year and how it will look on my transcript. Will this affect my chances of getting accepted? People are telling me that it doesn't matter if you're in an honors or regular classes, just get good grades. I get in the high 90s in these regular classes.

Here are the colleges I am thinking to apply to so far:
Penn State (my first choice)
Binghamton
Stonybrook
Queens (safety)
Boston University
St. Johns (safety)

Thank you so much.
