Do you think UChicago (or other liberal arts schools, like harvard, for instance) will reject extremely qualified students that seem to be “too techy” and might fit better at strong tech schools like MIT, gtech, caltech, stanford, cmu, etc?

Describe too techy? I think if you gush about how great being an Electrical Engineer would be, it might go against you. If you wanna talk about the next generation of engineering at the quantum or molecular level it would be a bonus.
No, they will still admit those types of students. Remember that math, chem, bio, and physics are all liberal arts subjects.
But if you like a mix and have high stats, take a look at Harvey Mudd. You get the benefit of s strong tech school that also encourages non-tech interests, and havr the rest of the Claremont Consortium to take classses in and socialize with as well.
Friend of my son just got admitted EA. She is a hard core STEM type.
Short answer: no.
Longer answer: UChicago is fine with techy people. They don’t want people who are techy to the detriment of all their other subjects and will struggle badly in Core classes. Think straight As in math and lots of B/Cs in the humanities and social sciences.
Anyone applying with a bunch of Bs and Cs on their transcript (having a few is fine and normal) has bigger things to worry about than “techiness.”
I would think being ‘techy’ would be a strength and a nice attribute to have.

By too techy I meant very into computer science, coding, artificial intelligence? UChicago is not known for their computer science program… the student recently got into MIT with international science fair honors, national math honors, leadership, etc… she was wondering if perhaps she came across as too techy because she wrote a lot about AI and coding in her essays
My son codes and is into AI (may end up going for his PhD in AI later) and was admitted last year, so the answer to your question is no. Being techy isn’t an issue for UChicago admissions. If techy is 100% of her strength, though, she might not enjoy UChicago as much since she’ll still need to have strong writing skills.
100% agree with @milee30 - if the candidate only cares about being laser like focused on one area then a liberal arts curriculum such as at UChicago maybe a waste of time.
All I will say in passing is that Computer Science is hot right now, but the “hot topics” change in this field every 3-5 years, causing rapid obsolesence. And, there is always one person out of 2 billion in India and China who will know as much about your area and be willing to be paid less than a quarter of what you might make…and the job of a multinational company is to find that person.
