I don’t have a recipe but maybe a Mexican street corn salad using their frozen charred corn. I know they carry Mexican cheese or you can use feta. If could grill a tri tip or chicken and serve with tortillas and salsa. Their jar salsas are good.
Or put together a Mediterranean style meal. You could buy hummus, the canned stuffed grape leaves, jarred grilled artichoke hearts, we like the frozen naan that can be used in place of pita bread.
Pizza dough and toppings served with a bagged salad.
If you want super easy but a little spicy, buy the soy chorizo, remove from the casing, crumble and sauté…with diced yellow onion if you like it. Add a can of drained black beans…and anything else you like. (I’ve added the fire-roasted frozen corn.) Prepare TJ frozen brown rice according to directions and add to the chorizo mixture.
Normally we eat the chorizo mixture in a tortilla but buy the El Milagro brand…not TJs, but perhaps they sell something similar. I also recommend the TJ quinoa chips and several of the TJ salsas with it.
Why does this meal have to only be from Trader Joe’s? Is it a contest or something? What kind of food do you like? The Trader Joe’s near me is a complete grocery store so you could pretty much make anything you’d make if you were buying food at another store. They have plenty of fresh produce, meat or meat alternatives, breads, pastas, gluten free items, etc.
I’m vegetarian and an introvert so the idea of making a dinner for 20 people gives me heart palpitations. I could do pasta and a big salad, though.
Their carnitas are good and easy. Throw it in the crockpot of instant pot. Serve it their flour or corn tortillas, their candied jalapeños or their salsa. Side of some of their bagged salad like a slaw one. Buy some two buck chuck (or whatever it’s called) and make a sangria. Some of their frozen ice cream desserts for dessert.
I was just going to suggest that recipe for the corn. You can defrost the frozen. I also like the corn salad on Smitten kitchen. I think you can use the Trader Joe’s frozen for any of the Mexican corn salads you find on the internet.
How about grilling carne asada and pollo asada from Trader’s and get tortillas and do a taco bar. The corn salad can be a side. You can get tortilla chips, guacamole and salsa from there too.
If you want something different from pasta, consider the TJ polenta (GF and I assume vegetarian). Maybe somebody has ideas for big batch slice sauté / make-ahead.
NOTE: This is good to keep on hand. Shelf-stable, $1.99 (vs $4.99 for same sized tube at my grocery store). Wish we had known about polenta in our camping days.
Sweetgum–Think of it as quantity. Triple or quadruple an easy recipe. You could do a baked potato bar, a taco bar, pasta with two sauces. A good dinner for a large group usually means you buy part of it (says Ida Garten). You could buy yakisoba stir fry from a restaurant and put it in two huge bowls. Add some sides and you are good to go. I was vegetarian for 35 years and still prefer meatless dishes. Trader Joe’s has stir fry sauces, appetizers, desserts. They sell cooked tofu that you could cube and have as a side.
@oregon101 Not sure why you are replying to me? I’m not making the dinner. I just asked @jym626 if there was a reason it had to be Trader Joe’s vs another store. Still wondering if it’s a contest or something.
TJ’s is just one of the stores I regularly shop at. The things I usually buy at TJs are frozen items which @jym626 said were out and snacks. They have really good snacks. Sometimes they have fun pastas or interesting spices and I like some of their fresh prepared stuff like, vegan raviolis for my vegan. I like the unusual stuff they have like the mochi ube pancake mix, but that’s not a great dinner suggestion unless you wanna do a pancake dinner.
Pasta and a salad is always easy and tasty for a group. A burrito or taco bar is a good suggestion, too. I might pick up some brownie bites from TJs for dessert.
What’s the group situation? Fancy dinner party, or big casual gathering like at a beach vacation? If the latter I often go for the pasta. It’s just so easy and pretty much everybody likes it. TJ’s has plenty of cheese to top it with and frozen meatballs (and veggie meatballs) if that will be okay. If it’s a fancy dinner party I really don’t do those so not much help from me.
Apologies I did not see the question. We are in a wine group and everyone brings something for the meal. The theme that evening was that everything made/came from TJs (wine and all food).
