If each UC has different pre-reqs for transferring like if I wanted to do a Business Major and I want to apply to UC Berkeley and Davis but Davis doesn't have a Business major for undergrads so I decide to go with Economics, doesn't that make it harder to transfer due to different pre-reqs? Even though their relatively similar but if I take classes at a CCC and getting ready to transfer and work towards an MBA after undergrad. Which UC would suit me the most and under what major?

This is a common issue that many of us face. The best thing you can do is try to finish all of the pre-reqs, for each major, and for each school you would be interested in applying to. Pre-reqs are a major point of focus during the review of your application for admission into a UC.

All the best

As @TonyPreMed2013 mentioned it is an issue. However Business Admin/Economics are similar majors where the prerequisites are often the same.

For example Haas requires:

Principles of Business–One introductory business course is required prior to transfer to the business major.
Math (Calculus)–2 semesters
One course in microeconomics
One course in macroeconomics
Statistics–An introductory course in probability and statistics for business.
English/Reading and Composition (R & C) Requirement (more information below).

UC Davis Economics requires:

Microeconomics
Macroeconomics
Calc (2 semesters)
Elementary Stats

The only difference is the English and Intro to Business courses which is not that bad. Therefore, I see no reason why you couldn’t complete both major prerequisites. Good luck.
