Transferring with limited extracurricular activities but real world experience

Hi, so I’m transferring to some selective schools from a Seattle Community College. Some of my colleges are UCLA UC Berkeley, UM, and NYU as well as some back up schools. My intended major is Economics and my GPA is a 3.71 which is expected to rise the next two quarters. My problem is that I don’t have a lot of extracurricular activities. I only joined the honors fraternity and an Honors in Action club this quarter, and just recently got an internship researching and writing about the economics of the housing market in Seattle. So it has all been recent, but I have a rather unusual CC story. I worked all through high school, saved money and moved out of state by myself at 18. I work and go to school full time and pay for all expenses by myself. I also spent this summer working on a fishing boat in Alaska, with 16.5 hour days, took that money and traveled all around Asia. I have also used the money I saved from working back home to travel to Europe and Cuba. That being said I have quite a bit of real life experience and have been too busy trying to live by myself in this expense city to focus on extracurricular activities. Now that I’m transferring I realized how much I’m missing. So my question is, how can I convey this in my transfer application.
BTW all this has been in the past 2 years from 18 years old to 20.

I think your experiences would be a lot more interesting to AOs than belonging to some clubs on campus.

I could see the fishing boat experience making for a fascinating and unique essay.
