I'm a junior and I need a way to fulfill my art requirement for UC's. The problem is that next year I want to take 6 academic classes and unless I take band or choir I can't take a 7th visual art class. Are their any other ways of fulfilling this requirement rather than a high school class?

The UCs have a school-specific database for high schools in California that lists the classes at each high school that satisfy the VPA requirement. Are you sure that you haven’t already met the requirement? Most high schools in CA have graduation requirements that overlap the UC minimum classes.

Huh? Not likely, but no matter.

OP:

you can also qualify for UC admissions by testing alone. One great “academic” class is AP Art History.

My D fulfilled this requirement by taking an online community college course during the summer (History of Music or something like that). You should ask your counselor if there is one like this available in your area that fulfills the requirement.
