I just found out that I had a really minor spelling mistake on one of my UC essays. It was 11:40 pm and although I had finished editing my essays, for some reason that error slipped.

I wrote "by" instead of "my" -- one single letter mistake.

I've applied to nearly all the UCs as an English major. For some reason, I think I've ruined all my chances of getting accepted.

I tend to think that these guys (adcoms) have seen like 300 essays a day and would probably ignore one spelling mistake. I wouldnt count yourself out entirely. Universities tend to be very liberal, and they would overlook minor stuff.

Don't worry about it. As Joev notes, the UC people have THOUSANDS of applications to read --- they don't have time to proofread each one carefully. And, even if they did, I can guarantee they will see far, far worse than yours. Good luck!
