I’ve heard a lot of great things about engineering and bio programs at UC Davis… but… how about their humanities (English, linguistics, arts, literature, etc)?

My sister got a linguistics degree from davis, she loved all of her linguistics professors. All of her upper division linguistics classes were small. It's a nice department. I took intro to linguistics at davis and had a good professor, the course had 400 students but the teacher still took the time to know me personally he tried to get me to take computational linguistics since he knew I was minoring in computer science sadly I didn't have time to take the course. I can't speak for any of the other departments since I haven't taken classes in them.

I applied as a Linguistics major so this is great news!

If you have gotten into UCI also, you should consider it, because UCI actually has an excellent humanities program.
