Do employers/MBA admission committees care about difficulty of course load when hiring/selecting people? I understand the final degree is the main point, but does it really help to take more difficult classes in the long run (besides learning more)?

It can't hurt, but the main criterias for MBA admissions are leadership potential and quality work experience. Don't worry too much ablout classes, just focus on getting the best job you can.
