Undergrad Major and Grad School

I've heard that 53 and 54 aren't so bad, and the breakdown heavily depends on the prof.

What about honors? I'm consider H53, H54, and the Physics H7 series. These are more conceptually/proof based?

So, let's say I do a double in EECS/Nuclear and take a bunch of the more theoretical courses like mrniphty suggested- will this be enough of a prep for doctoral programs in hard science, or will I have to play some/significant catch-up. Also, would it be difficult to get research with a professor in hard science if I'm not majoring in that discipline? Or is it just a matter of volunteering?
