double majoring in psychology and political science or political science and Econ more beneficial for law school? I struggle in math so my gpa would be a little lower if I decided to go with Econ.

Your college major is not important at all. Study what you enjoy and can do well in.
I agree with happy1. If what you study helps you to think analytically and creatively and express yourself well, all the better. I double-majored in history and theatre. My background in theatre was an excellent preparation for law school, and apparently a few admissions committees thought so, too (or perhaps they were just looking for a very diverse student body – “hmm, we’ve never had a costume designer before”). Study what you enjoy, what you have some passion for, what makes you think. And don’t obsess over your GPA – if you like what you are studying, the good grades will follow. Good luck!
