Based on your stats, I would say your chances of acceptance are pretty high. I think you will be admitted. Don’t submit World history SAT. That 680 might not look great. Good luck!

You are pretty much a lock at ED. If you want to eventually work in business, don’t apply Econ CAS- it would be much better to apply ED Wharton.

Yes, but your stats are pretty good. If you are really interested in doing econ, you should probably taking a look at other programs before you bind yourself to Penn (although its econ is pretty good). If you want to do business however, definitely apply to Wharton- they get the majority of the recruiting, and do a much better job in directly preparing you for joining the workforce.
I feel with your profile you could get into a more selective school or program than Penn CAS, but if Econ at Penn really is your top choice, then you should apply ED.
I think you are certainly a competitive applicant for Penn but I am not sure what everyone is jumping up and down about. You perfect score boosts your chances to about 30% ( perhaps slightly more because you are applying ED). Your ECs, however, are not particularly impressive and you lack depth in any one area so I would say you might be looking at a deferall in the ED round. In any event, my guess is no better than anyone else’s here. Good luck to you!
