You can put both Hispanic and White and adcoms will look for the connection. You can add something else, if it applies. There is no “Well she marked Hispanic so we won’t evaluate based on her full application.”
But as said, making the connection count is more than just checking the box.

White for race. Hispanic for ethnicity.

There are probably many others.
I don’t think China pursues it to such a fine art…
