Which would you say is better? Why? Which one will be better for applying to grad schools, say, Harvard Business School? How about NYU econ vs. Vassar econ?

I think it depends on your career goals, but I would pick NYU Stern hands down.
NYU Stern > NYU Econ

If you want to work at Wall St or absolutely want to get into Investment Banking after undergrad I would say NYU Stern would give you a better shot…but if you plan to go for an MBA from a top 10 Business school I would say vassar is a better school…also vassar is a small liberal arts college where you can get the real college experience whereas NYU will make you just another NewYorker

If you do well at NYU, you’ll have every chance to go to a top 10 MBA program, even Harvard. These schools are very different, so you should be asking yourself which one you like more. Personally, I would go with NYU Finance. NYU Econ is not even comparable to NYU Finance and if you’ve got Finance in the bag, you shouldn’t even be considering it.
