From snooping around on here, I got the impression that a few applicants were able to sneak into Wharton with “sub-par” stats ED. Are the admissions criteria somewhat less for ED applicants? Do you think I have a shot?

White male, New York public school
GPA: 3.9 UW
SAT: 1320-1350 is what I usually get on practices
ECs: Loads of major ones, including a bunch with leadership, two varsity sports.
My writing is impressive, so I’m expecting to write a great essay.

The problem is I don’t think my SAT score will suffice, and I think that Wharton will feel I’m not unique, as a White male from NY.

Can I still hold out hope for a few more months?

I don't think "sneak in" is the appropriate term to use. If someone gets into Wharton, ED or RD, then the admissions office obviously saw great potential in their application. Recruited athletes may be a very small exception.

Anyway, about you..your SAT score is below average, but your GPA is great and Penn seems to value that more than the SAT. Maybe spend the summer studying for the SAT and see if you can break 1400. And don't worry about being a white male from NY. That does put you at a disadvantage, but you can't change it and they do accept plenty of white males from NY each year.

White male from NY (Long Island to boot) right here.

You probs should raise that SAT to like, 1500-ish? (I had a 1530/2330... Penn looks at the Writing, so do well on that too), especially being white and from NY. Then you might have a decent shot, but it's so unpredictable.

"A bunch with leadership"
^ That phrase concerns me. If you want to convey to the admissions officer that you're a passionate, dedicated leader in these activities, you need to know how to present your extracurricular experiences.
