UC’s do not consider Race/Ethnicity in their admission decisons however, First generation is a consideration for the UC’s.

You need to calculate your UC GPA and post your UW, Capped Weighted and Fully weighted UC GPA. Here is the calculator:

UC’s do not use 9th or 12th grades in their GPA calculation but will use 9th grades to determine if you passed/completed your a-g courses. Since applications are due November 30th, you will only list your Senior year courses and these are used to determine that you meet UC a-g course eligibility.
Your EC’s look great but you will need to get your test scores up to be a competitive applicant.
Your intended major can make a difference on your chances and you need to spend some time on the personal insight essays and make them shine.
UC’s use 14 areas of criteria when reviewing applications but most of the emphasis will be placed on your UC GPA (capped weighted), Test scores and HS course rigor. Your Essays and EC’s are what will set up apart from the rest of the applicants.
Here is some statistical data for 2017 UC admits based on the UC Capped weighted GPA and it is not major specific. Updated admit rates should be available in the Fall.
Freshman admit rates for UC GPA of 3.80-4.19:

Freshman admit rates for UC GPA of 4.20 or above:
UCB: 42.7%
UCLA: 47.2%
UCSD: 84.2%
UCSB: 82.0%
UCD: 90.3%
UCI: 94.1%
UCSC: 92.7%
UCR: 97.5
UCM: 98.1%
Aim for at least the 50th percentile (average) SAT scores to be a competitive applicant.
25th - 75th percentiles for SAT:
UCB: 1280-1490
UCLA: 1280-1500
UCSD: 1250-1470
UCSB: 1210- 1450
UCD: 1190-1430
UCI: 1190-1420
UCSC: 1170-1380
UCR: 1090-1310
UCM: 1020-1230
Right now based on your SAT score and GPA, UC Merced, Riverside and Santa Cruz will be the most likely options. If you are a California Resident, I would definitely include some Cal States especially your local CSU as a safety.
