What are my chances of getting into the top UC's as a Canadian student?

So im really new at this... but here goes!
Im thinking about UCSD because Ive heard it has a good internation/global studies major... I am thinking of doing international law or medicine, I know, two very diffferent things, and so of course UCB or UCLA would be amazing too.. Ive been told UCSB is a good option, but I want to aim a bit higher, as far as I know from looking at things online, its a good scool but UCLA or UCB are well, better. I may be sounding ignorant right now but its hard getting an idea of colleges when you live in a different country! Anyways, here are my 'stats' i guess.
I go to a Canadian high school that unfortunately doesn't have any AP or Honours courses, we go by a Essentials(in plain English..stupid), college and university... college being more average where as university is more advanced. I've taken the most challenging courses I could in my eyes, like three sciences, two maths, English, law, etc. for my senior year. All university/advanced level.
Right now im in gr 11 and ive taken two years of french.. I may take a third year because I know UC's reccomend that... but Ive maintained an overall average of 92% which is reallly good over here, and I think would roughly be a 3.7 GPA according to collegeboard all in advanced level courses like chem, bio, math, history... I am going to try to get a higher average next year but my course load is only going to be heavier, so realistically, ill be in the same area GPA wise. My counselor has told me he would tell the colleges that those were 'the most rigorous courses made available to me' on some form that they send him.
But i still feel like im at a disadvantage not being able to go to a private school or a school that had an IB program...
EC wise, Ive been a part of a bunch of sports teams, soccer, badminton, basketball, volleyball... hoping to be captain of volleyball next year.
Im a part of student council and another humanitarian group, hoping to get vice-presidential spots next year or even president. I volunteer at the local hospital and I've also been horseback riding for about five years now, and volunteer with disabled children who use riding as an escape from not being able to walk.. haha as cheesy as that sounds.
I also have a part time job... so all in alll I feel like I do have a lot of extra curricular and sports that but also have good grades which makes me pretty well rounded i HOPE.
also im taking my sats twice, hoping to reach a score of at least 2000.
BTW, am I at a disadvantage being a Canadian student with the canadian curriculum taking the SAT?
To anyone who read all that.. Thank you so much for your time.. help a girl out
