You aren’t competitive. Take more APs and study for those tests. You should also take 2-3 subject tests at the end of junior year. Your ECs are spectacular. With your current scores, the schools listed, with the exception of some the UCs, will be reaches for you. When you get around to applying, look at some safety schools just in case.

are you in-state for Texas or CA? I think your stats look good but add a few more ‘match’ schools. Actually if you are in CA and would be happy if something like UCI or UCR was your safety, you are probably okay.
Great course choices! AP exams don’t weigh heavily for admissions but make sure you get either the SAT or ACT scores up. Your GPA is fine but to be truly competitive for the Ivies, your SAT/ACT scores should be closer to 2250+/34+.
Like gormar said, don’t worry about retaking the math 2 subject test.
