What classes to take senior year? (Foreign Language)

Hi, I moved schools before my junior year and my school before had no foreign language classes. However, for most colleges I was thinking of applying, 4 years of foreign language is recommended.
I took Chinese characters in my old school, (it’s basically the writing system of chinese/mandarin) - except it doesn’t count as a foreign language class.
So I’ve been taking Chinese 1 this year, and as I learnt few years of French in elementary school, I was thinking of studying French 3 over the summer and taking French 4 next year.

My question is , would taking 2 classes of foreign language look ok when I’m applying to colleges - and would that well fulfill the 4 years of foreign language recommendation? (my intended major is STEM) Or would it look like too much?

I am also taking APUSH, AP English Comp, AP Bio, Anatomy Honors next year.

What most colleges really want is for you to reach level 3 or 4 of one foreign language. They dont actually care how many years it takes to get there. If you can take french 4 next year, you should be set.
