I'm currently a sophomore. In junior year, I will take two AP classes and their respective exams. In senior year, I plan to take five more AP classes, but the AP exams won't be until after college applications, meaning I won't have exam scores for those courses at the time of applications.

So what would an admissions committee think about this? Do AP courses matter less if I haven't taken the exam?

Thank you for taking the time to read this, and thank you in advance for your help! (:

If you score well on the two you take junior year, they can definitely help a bit in your admissions.

Taking 5 AP classes senior year also helps. It tells schools that you continue to challenge yourself by taking hard courses. So even without the exam, if your grades are high, this can help you as well.

Bottom line: Just take AP classes and do well in them.

Exams also help you with college credit later on, although it varies from college to college. I took 13 exams and received 40+ semester credits. This is helping me graduate a year early, which is saving me $47,000 in tuition, room, and board (private school). $47,000 is no joke.
