What Do Colleges Look For?

I know that it's better to do the things you enjoy than do a bunch of random things to look good to colleges... However, there are plenty of things I enjoy and I want to make sure I do the things that will benefit me most overall.
This year, I will be doing:
International Baccalaureate Program
Marching band
French club historian
Private rowing lessons (Competitive season starts in February)
Private flute lessons
Metropolitan Youth Orchesta (we play at Carnegie Hall this year!)
All-County & All-State band
YMCA Leadership Club
Volunteer at a local history museum
Take Chinese II and AP Environmental Science online
I get All A's, with a VERY OCCASIONAL B.

What types of things have colleges shown interest in in the past? What sorts of things do you do that you will put on your resume? I plan on becoming Marching Band leadership and moving up in French Club next year.

Intellectual vitality
