Anything in particular that they like to see? What are some factors that would make a transcript stand out or have that extra sparkle? (Besides the usual good grades, test scores, and extra curriculars) Like for example, I’m taking 4 years of a language. Does that help?

If you have a high GPA with difficult ap or IB classes then you have a good chance of admission even with bad test scores.
If I understand you correctly, the answer is not much if at all.
UF doesn’t use your transcript in admissions, they will require that you enter your classes and grades into the SSAR (Student self-reporting site). They will have you enter your classes and grades from 9th to 11th grade (plus any high school level classes from 8th grade, such as Geometry). I think they also have you enter your class rank and GPA, if it’s available on your transcripts (this is from 2013, so it may be a bit different today).
UF will consider your grades and “class rigor”. To some extent, it will also take into account how you did verses your peers in high school. While they will check your classes to make sure you’ve met the minimum admission requirements (such as 4 years of English, 3 of social sciences, etc.), they don’t put much into whether you took AP US History or AP Government.
Now, in the application itself, you will be able to list all of your EC’s and if you did, for example, school newspaper for 3 years, you could list that as an EC. Or if you did something related to your 4 years of language (enter a competition, go to a conference, travel abroad), you could also treat that as an EC. UF does prefer to see a strong commitment to a few ECs, rather than a weak commitment to a lot (for example, joining a bunch of clubs for only one year vs. being in 1 or 2 clubs for 4 years).
