what do the colleges put on the letter if you are defferred or you are rejected?

I found this sample deferral letter on the net.

A "reject" letter means that a college isn't interested in you at all.
A "deferral" letter just means that the college will hold out for "stronger" candidates before settling on accepting you! <no disrespect="" intended=""></no>

Dear Ms. Applicant:

Thank you for applying to the College of Knowledge as an Early Action candidate. After a review of your academic credentials submitted to date, the Admission Committee is not able to make a decision on your file at this time. As a result, your application has been deferred to our Regular Decision applicant pool. We will inform you of an admission decision on or before April 12, 2004. I stress to you that many of the students who are deferred will ultimately be offered admission.

If order for the Admission Committee to review your most recent credentials, you should arrange to have an official copy of any additional grades sent to us as they become available. If you have retaken the SAT I or ACT test, or are about to do so, you also should arrange to have those results sent directly to the College.

All of us in the Office of Admission appreciate your sincere interest in the College of Knowledge. If you have any questions Courtney, please feel free to contact our office.

Sincerely;

Admission Committee Chairperson

A short answer to OP: at some places, Not Much. Many schools defer a huge number but only ultimately accept a handful. Probably the best way to tell is find out how many the school deferred last year and how many ultimately were accepted form this pool.
