What is your signature dish?

That’s what’s so funny. I’m a very good cook with a large repertoire, but everyone wants the potato salad…because BACON.

I will send DH to your house, @vwlizard, because he LOVES potato salad and never gets it because I hate it (anything with hard-boiled eggs or mayonaise) and won’t let him make it in our house because the smell makes me gag. He eats it whenever he get the opportunity – at someone else’s house.

I’d NEVER put hard boiled eggs in my potato salad! BLASPHEMY! I sometimes make one without mayo. More of a warm potato salad with the bacon roasted potatoes (and sometimes I add arugula) and a mustard/vinegar/oil/parsley/dressing. As long as I add the bacon it gets devoured.

I love lasagna but rarely eat it because, you know, too much uncontrollable goodness.

I love hard boiled eggs and Duke’s mayonnaise in potato salad! But, my husband made a German potato salad yesterday with bacon, bacon grease, vinegar,etc. It was good too.

@ChoatieMom , Can you just stay out of the kitchen long enough so your husband can make himself some potato salad now and again?

Nope. That smells goes everywhere. I don’t allow hard-boiled eggs in the house for any reason, not even Easter.

So I take it you won’t be asking for my deviled eggs recipe? :laughing:

My extended family would say the hot pineapple Casserole at thanksgiving.

My kids would say Dutch baby variations for brunch. Or mashed potatoes (apparently they beat everyone else’s!)

My husband would say this ground beef casserole thing with peas and then biscuits filled with cheddar on top.

I cook a lot and like to change things up so
I don’t personally feel I have a firm “go to”.

I would love your recipe for crockpot chicken Chile verde!

Chicken Chile Verde

1 1/2 lb. boneless skinless chicken breasts
1 1/2 cups bottled salsa verde
1/2 medium onion, chopped
1 bay leaf
1/2 tsp. pepper
1 tsp. ground cumin
1 tsp. minced garlic
1 to 2 TBLS. jarred, sliced jalapenos
2 tsp. chicken bouillion granules
1 can white beans
Optional- guar or cornstarch to thicken ( I don’t use)

Just put all ingredients except beans and thickener (if using) into a crockpot. Cover and set to low, cook 9-10 hours. about 20 minutes before times up, shred the chicken and add the thickener. Drain and rinse the beans and add in.

Serve with sour cream, shredded cheese, chopped cilantro. I serve it with warmed wheat tortillas.

Neither my husband nor I like eggs and he won’t touch mayo. I make an Italian potato salad instead of the traditional one. It is boiled cut potatoes, drained canned green beans (cut or whole not French cut), with salt, parsley flakes, olive oil, and red vinegar. I have brought this to pot-lucks and people love it.

Question - add the thickener at the beginning or the end? I’m confused from what you wrote.

I sometimes purée some beans when I want to thicken up something like this. Makes it creamier, too!

I had not thought of pureeing the beans but yes, that would work. I add them close to the end so they don’t get mushy.

We eat lots of eggs, particularly my husband. He doesn’t really like mayonnaise
( I do on sandwiches, hamburgers- he uses mustard). But, he WILL eat Duke’s mayonnaise in potato salad.

No cooking of the eggs or even after refrigerated? I know certain smells can really be off putting so wondering if its just the cooking process or just the fact they’re even in the room, lol?

Nope, because once they’re cracked, I can smell them a mile away, so don’t even start boiling the water.

Even as a kid I couldn’t do hard-boiled eggs. The Easter bunny hid chocolate-filled plastic eggs for me. It wasn’t until I was married that I learned to tolerate fried, scrambled, or omelettes for DH’s sake. I don’t care for eggs in general (unless as an ingredient in baked goods), but I can eat a scramble or omelette now and then. Usually, I skip breakfast.
