<p>Nope - no trays at all. Just carry and balance your plate, make multiple trips, etc. This has been a trend for at least 5 years. The link is from 2009.</p>

<p>Truth be told, for all the concern about the environment, this is more about the Green, as in money. No trays means you can’t load up on food as easily, so lower food costs equals more profit. The water and washing costs saved, especially in areas like the Northeast where there is no water shortage, is negligible. Cutting out 10% of your food cost while having the same revenue is huge.</p>
