What to use instead of italics?

I need them pretty badly for this part of my essay:

I?ve always been an especially picky eater, and my fussiness has never been the source of more conflict than when the lasagna hits the table during the holidays. Every year, I flat out refuse to touch it and, every year, it?s the same routine. The whole family gets involved.
?So, Robert, is THIS gonna be the year??
?How do you KNOW you don?t like it until you TRY it??
?It?s SOOO good. Just take a bite.?

(i capitalized what would have been the words, and i also don't think it works)

Any suggestions? thanks

I think capital letters work, but that's just my opinion...

i used quotations

I don't think you need anything for emphasis. The emphasis comes from the writing. If you don't agree, you could use capital letters, but that's like hitting people over the head, or shouting.
