Hey guys I have access to the Princeton application portal and it gives me an option to submit supporting docs. Would a journalism portfolio fit under this category? Would a short essay regarding one of my ECs?

The journalism portfolio would probably fit better under the category, but keep in mind that Princeton highly suggests that any extra documents you upload be very crucial to your application. They don’t want to go through extra and unnessary documents. Even if you do decide to submit your portfolio, only submit one part, and make sure it is providing a large positive impact on your application. If your journalism is well documented in your normal application, it doesn’t make sense to submit it.
