Would it be safer to send my two good math subject test scores (math ic and math iic), or my two good math scores and a bad literature score, for fear that colleges will not accept the two math tests as their two required SAT IIs?

Normally, colleges do NOT allow Math I and Math II to fulfill the “2 subject tests” requirements. It’s always better to send one of the maths (or both) and one (or more) other subject tests.

Do you know specifically which ivys / top tier schools do not accept the Math I and Math II as “two subject tests”?

Do some research. I’m not going to check every single Ivy’s website for you. Almost all of the time, using 2 subjects in mathematics will not satisfy the “two subject tests” requirement (e.g. Harvard)
