When should you do an internship?

I'm looking into getting a job in finance after my undergrad. I'm a freshman right now, and though I get emails about applying for internships, they require resumes, and I have little to put on them (no GPA yet since I'm only first quarter, not done much in an extracurriculars).

So, I want to know whether I should try and get an internship for my first summer, or is it more normal to try and do one in the summer of 2nd and 3rd year?

Yes, you shall try to get an internship for your first summer. You may or may not succeed. However, if you do not try you will definitely get one. There are very few internship for freshman but they do exist. Go to see a career counselor at your school and ask them for advise. Once you get your first internship and do well, the future internships will come easier.
