Which class choice would be better for me (a junior)?

I ended up dropping AP Bio b/c it was basketball season and I was overwhelmed, so now I have to take a science class at a community college. Here are the three scenarios.

Take a challenging science at the community college for this next semester, and then over the summer take an easy science such as psychology or environmental science at the community college. However, since I am taking a challenging science I MAY end up with a B in one of my other classes (I currently have 0 b's in high school). Assume that I will get a 4 on the science test that I choose. However, I think this would show to colleges that I'm taking a rigorous schedule (I'm also in APUSH and AP Calc AB).

Take an easy science at the community college for this next semester, maintain all A's, and then over the summer take a challenging science such as Bio or Chem. I would then take the Chem/Bio subject test during senior year, and would take the AP science test for the easy science that I choose for this next semester. The downside of this scenario is that colleges may think I'm taking the easy way out by taking an easy science during the school year. Will my taking of a hard science during the summer show colleges that I have a rigorous courseload, or will they know that my classes are relatively easy? Also, will colleges wonder why I didn't just take Bio at my high school?

Same as scenario 2, BUT in the summer continue on to more branches of the easy science I'm taking. Basically what this scenario would be is if I took psychology, I would then take more advanced psychology classes in the summer. I would also take the chem/bio subject test after self study. I would maintain A's in all my classes for this next semester.

Which of these scenarios is best for college apps? Thanks a lot!

Sorry I edited my previous question with a few changes. Please help I am really confused!

Take “Introduction to Biology” at the community college for this next semester, and then over the summer take an easy science such as psychology or environmental science at the community college. However, since I am taking Biology which I assume is challenging I MAY end up with a B in one of my other classes (I currently have 0 b’s in high school). Assume that I will get a 4 on the AP Bio test. However, I think this would show to colleges that I’m taking a rigorous schedule (I’m also in APUSH and AP Calc AB).
Take an easy science at the community college for this next semester, maintain all A’s, and then over the summer take Bio. I would then take the Bio subject test during senior year, and would take the AP science test for the easy science that I choose for this next semester. The downside of this scenario is that colleges may think I’m taking the easy way out by taking an easy science during the school year. Will my taking of a hard science during the summer show colleges that I have a rigorous courseload, or will they know that my classes are relatively easy? Also, will colleges wonder why I didn’t just take Bio at my high school?
