2 from this list:
Bio
Math 2
US History
(am taking AP Bio, AP Eng Language, AP Spanish, AP US History, Precalc, and Physics H jr yr, when I'll be taking SAT IIs)

UPenn recommends taking SAT II Spanish, but I'm weak in Spanish....should I....will it affect my application and ultimate acceptance (or lack thereof) to UPenn? (am applying to College of Arts and Sciences early decision)

or, I may be applying to Columbia College (Univ.) early decision

It's better to do what you're strong in. If you're weak in Spanish, there's no point in taking the test and getting a low score. I would recommend Biology and Math IIC. Really though, all three of those tests are easily do-able with those AP tests.

Since you'll be taking AP US History, I don't see why SAT II US History would be a problem. As long as you prepare for any two of these, you'll be ready.

I gave Physics in December. I studied for just 2 days and during the test I had no idea about 95% of the questions. I could only answer 50 out of the 75 and probably got 20-25 of them right (God knows how!). I still got 680. I guess it curves a lot. So, you might think about giving Physics.
