I heard that Georgetown University wants 3 SAT Subject Tests, is this true? Are there any other schools that require 3?

Most schools that I've researched only ask for 2.
I've taken Math 1 (640) and Math 2 (790). I am going to take the US History this coming May, and I'm confident that I will score well. I want to only send colleges my Math 2 and US History score, but if some colleges require 3, would they accept my Math 1?

There are none that actually require three. Georgetown and Johns Hopkins highly recommend three. There are no others that require or recommend three. Submitting two maths will be counted as only one SAT subject test.

usually the schools require two except for the one already mentioned however if you take three and only two is needed you can chose the best ones (i plan to do this myself)

for schools that ask for 2, can you submit only your 2 best even though you have taken more? For example, Stanford asks for all SAT I scores, but I dont know their policy about SAT II.

Considering that you’ve only really taken one (Math I isn’t looked at as being credible/legitimate, and a lot of schools ignore it in favor of Math II), you should definitely take at least 2 more. Georgetown and a few other schools ask for 3 tests, and even those that only ask for 2 would be somewhat impressed if you had exceeded their requirements and scored highly on a third test.
